What is an MVP (minimum viable product)?

An MVP is the smallest version of a product that does its core job well enough for real users to use — and, ideally, pay for.

Its purpose is to learn whether people want the thing before building the rest. In the app stores the bar is higher than it sounds: the MVP competes on the same results page as mature apps, so the one thing it does has to be done well.
